Professional Cookery Level 3

COURSE OVERVIEW

This qualification is:

  • aimed at chefs who have been successful at Level 2 and wish to further their skills.
  • designed to help learners further their knowledge and skills within a kitchen environment and will result in a nationally recognised City & Guilds accredited qualification.
  • suitable for existing chefs and those wishing to improve their career prospects.
  • delivered entirely in the workplace.

HOW DOES IT WORK?

This qualification is designed for those working in a cheffing role or similar, or those who would like to further their knowledge of this area.

The qualification reflects the more developed ability of the chef and cook.

It provides you with the opportunity to expand your knowledge and understanding across a range of professional cookery concepts and practices. With a larger emphasis on preparing a cooking a wide range of complex dishes.

WHAT WILL I STUDY?

The Professional Cookery Apprenticeship is made up of mandatory and optional units and your Assessor will help you chose the correct number of optional units to achieve the qualification.

COURSE UNITS:

  • MAINTAIN THE HEALTH, HYGIENE, SAFETY AND SECURITY OF THE WORKING ENVIRONMENT
  • MAINTAIN FOOD SAFETY WHEN STORING, PREPARING AND COOKING FOOD
  • MAINTAIN THE HEALTH, HYGIENE, SAFETY AND SECURITY OF THE WORKING ENVIRONMENT
  • DEVELOP PRODUCTIVE WORKING RELATIONSHIPS WITH COLLEAGUES

OPTIONAL UNITS INCLUDE:

  • COOK AND FINISH COMPLEX MEAT DISHES
  • PREPARE, COOK AND FINISH DRESSINGS AND COLD SAUCES
  • PREPARE, COOK AND FINISH COMPLEX SOUPS
  • CONTRIBUTE TO THE DEVELOPMENT OF RECIPES AND MENUS

Additional Units based on job role.

WHERE DO I STUDY?

You will work towards the Professional Cookery Level 3 qualification in the workplace.

HOW LONG DOES IT TAKE?

1 Year

WHAT DOES THE COURSE LEAD TO?

On completion of Level 3 Professional Cookery, with support and opportunities in the workplace, can progress onto:

  • Supervisory positions
  • Head Chef Roles
  • Advanced Diplomas in a range of related sectors

HOW WILL I BE ASSESSED?

This qualification requires you to demonstrate the skills and knowledge required to work in a professional cookery role.
